Galette des Rois

Always on January 6th I make a Galette des Rois. Essentially this is ready rolled puff pastry with a filling of frangipane (almond paste) Originally made to celebrate the arrival of the Three Kings at Bethlehem this confection celebrates the end of the Christmas season.
The actual recipe is really straightforward and quick. It always used to be baked with a bean or figure in it and the person who found that was king/queen for the day! Serve it topped with a golden paper crown
Ingredients
Roll of ready made puff pastry
100g butter (or non dairy equivalent)
100g caster sugar
30g self raising flour
70g ground almonds
2 eggs
Method
Divide pastry into two and cut out two circles
Beat the remaining ingredients together to create a smooth paste (frangipane)
Place frangipane on one circle of pastry and place other circle on top
Seal edges and make hole in centre. Score pastry with back of knife as illustrated.
Glaze pastry if wished.
Bake for 25-30 mins at 180c (fan) till done.
